Kung Pao Veggies
Robert, my husband always tells me don’t start off apologizing. Gosh, I feel guilty that I’ve skipped two weeks of posting. I’m glad that it bothers me. I’ve been off the grid, first on a five-day retreat to the desert, then, with hubby and kids on the beach in La Jolla. All I could do was lie around and veg….I know you know what I mean.
When we returned home, I headed for my kitchen and rummaged around. Luckily I had enough vegetables to cook a quick dish, Kung Pao Tofu and Vegetables Click here for recipe. This recipe can be found in my new cookbook, Vegan Family Meals. I tweaked it a bit as I used up the lotus root I had in my fridge. Click here for info on Lotus Root.
After we devoured the first home cooked meal of the week, I ran my boy down to the corner barbershop for a haircut. Walker sat under an old-fashioned hair dryer. He was so curious as to what this seat was used for. I told him to call his grandmother.
It is always good to go away and equally satisfying to return. Refreshed, I notice how common things around my house looked different. My funky pot rack, even out of focus and the worn butterfly rug at the back door made me feel welcomed.
I am happy to be back HOME again!
